Japanese Food - some basic terminology

In Japan the Japanese are traditionalist in using high quality seasonable ingredients, and for spending time on the presentation of food. It appears that this tradition has been imported into the UK.  For the health conscious , Japanese food tends to be low  in fat content  which is great but unfortunately also high in salt - not so good.

• Dashi stock is a stock for Miso soup, and other dishes which require a stock for simmering such as noodles. The stock originally was made from kombu ad edible kelp (seaweed) and dried tuna, today instant granuals, powder or liquid substitutes are used.
• Donburi is a large bowl of steamed rice topped with savory food
• Miso soup. The base for many Japenese soup dishes consisting of Dashi stock and a miso paste, into which other ingrediants can be added.
• Noodles a popular Japanese alternative to rice. There are various noodle types
  • Soba, Undon, Somen and originally from China Ramen & Champon
  • Yaki means fried
• Rice is the staple food in Japan as potatoes and bread are the staple food in the UK. The Japanese use short grained rice which is sticky and allows moulding inoo shapes if required.
  • Gohan rice is served in a bowl
  • Meshi rice is served in on a plate
  • Mochi a glutinous rice cake
  • Okowa is a cooked glutinous rice
• Sake is a wine that is fermented from rice, it is about 15% alcohol and often served warmed
• Sashimi is traditionaly thinly sliced fresh and raw seafood. In the UK the meaning has widened to include other dishes. The Sashimi is served with a sauce dip and a garnish
• Sushi is made from vinegareded rice and either mixed with or topped with fresh ingrediants such as fish, raw fish or seafood.
